    Chicken Sausage Patties Ingredients

    When making any kind of sausage, the most important part of the recipe is the seasonings. In this aspect, this Breakfast Chicken Sausage is no different from Italian sausage or even a Homemade Bratwurst Recipe.

    Meat: I prefer store-bought lean ground chicken for this breakfast chicken sausage recipe.

    Vegetables: The only veggie you'll need here is roasted Hatch Green Chiles.

    Herbs and Spices: For the chicken patty seasoning mix, you'll need Hatch Red Chile Powder, All Spice, Rubbed Sage, Dark Brown Sugar, Crushed Red Pepper, Kosher Salt, and Black Pepper.

    Step-by-Step Instructions

    Step 1: Begin by adding all of the herbs and spices together in a mixing bowl.

    Preheat olive oil in a Cast Iron Skillet or other heavy skillet over medium-high heat.

    Step 2: Whisk all herbs and spices to create a chicken breakfast sausage seasoning blend.

    Step 3: Add the ground chicken and Hatch Green Chiles to the bowl. Using a spoon or spatula, stir the mixture to ensure the seasoning blend and green chiles are even dispersed throughout the chicken.

    Form the mixture into 8 patties.

    Step 4: In the preheated skillet, lay out 3-4 patties and let them become dark brown and seared on one side, then flip and sear that side. (See Expert Tips)

    Repeat this step with the remainder of your chicken breakfast sausage and serve it hot.

    Expert Tips

    • Try different spices: Feel free to adjust the spices to suit your taste and preferred level of heat(spice). While they already have a sweetness to them, a touch of maple syrup can increase the sweetness to slightly overpower the heat.
    • Use a non-stick spatula: When placing the patties in the skillet, I use a rubber spatula with a bit of olive oil on it. This way, I can scoop up even-sized amounts of ground chicken and press it out in the shape I want in the skillet. This makes the process hands-off and much more manageable.

    Can I make these sausages ahead of time?

    Absolutely! You can prepare the patties and store them in the fridge for up to 2 days before cooking. Once cooked, they will be good in the refrigerator for up to 5 days, making them perfect for meal prep. They also freeze very well, so you can make a large batch and reheat them as needed.

    Can I use ground turkey instead of chicken?

    Yes, ground turkey is a great substitute and will work just as well in this recipe.

    What can I serve with chicken breakfast sausage?

    Ingredients

    • 1 lb Lean Ground Chicken
    • ½ Cup Roasted Hatch Green Chiles Chopped
    • 2 tablespoon Dark Brown Sugar
    • 2 teaspoon Coarse Ground Black Pepper
    • 1 teaspoon Red Hatch Chile Powder
    • 1 teaspoon Crushed Red Pepper
    • ½ teaspoon Rubbed Sage
    • ½ teaspoon Kosher Salt
    • 2 tablespoon Olive Oil For the Skillet

    Instructions
