    The ingredients for this recipe are straightforward, but they pack a big punch of flavor, spice, and sweetness that all work perfectly together. That said, the quality of ingredients is what makes a great sandwich.

    Bread: Brioche is the obvious choice for this breakfast sandwich recipe.

    Meat: For this Brioche Breakfast Sandwich I like to go all in on the flavor and spice with Hatch Green Chile Bacon and Hatch Chile Chicken Breakfast Sausage Patties.

    Cheese: I like to use sharp cheddar cheese, but feel free to use your personal favorite.

    Eggs: Just some regular old eggs will do the trick. But liquid egg whites will also work great.

    Step-by-Step Instructions

    Step 1: Begin by cooking the bacon in a cast iron skillet, oven, griddle, air fryer, or toaster oven—whatever works best for you.

    While the bacon is cooking, heat the Chicken Breakfast Sausage in the microwave, then keep it warm while leaving it covered.

    Step 2: Next, scramble the eggs and set them aside.

    Step 3: Lightly oil or butter a hot cast iron skillet and toast the brioche buns. Once toasted, set them aside.

    Scrambled eggs folded into a square, topped with cheddar cheese and a hatch chile chicken breakfast sausage patty.

    Step 4: Lastly, pour the eggs into the skillet over medium-low heat. Allow them to almost entirely set, make a slice down the middle, and then begin folding them into two separate sections. Make them a square shape for uniformity on your Brioche Breakfast Sandwiches.

    Turn the heat down to low, and top each scrambled egg square with shredded cheese, chicken sausage patties, and hatch chile bacon.
