Ultimate Breakfast Brioche Sandwich

  • Begin by cooking the bacon.
  • Next, scramble the eggs in a mixing bowl and set them aside.
  • Lightly oil or butter a hot cast iron skillet. Toast the brioche buns. Once toasted, set them aside.
  • Pour the eggs into the skillet over medium-low heat. Allow them to almost entirely set, make a slice down the middle, and then begin folding them into two separate sections. Make them a square shape for uniformity on your Brioche Breakfast Sandwiches.
  • Turn the heat down to low, and top each scrambled egg square with shredded cheese, chicken sausage patties, and hatch chile bacon.
  • Cover the skillet and allow the cheese to melt. Once the cheese has melted, use a spatula to place the stacked ingredients onto the bottom of the brioche bun, then place the top bun on and serve.

  • Make It Spicy: For an even spicier kick, add a few dashes of hot sauce or a slice of pepper jack cheese.
  • Extra Protein: Add a slice of ham sandwich for an even heartier brioche sandwich.
