Step-by-Step Instructions
Begin by heating the butter and olive oil In a 12" Cast Iron Skillet over medium-low heat.
Add the onions, carrots, and celery once the oil is hot and the butter is bubbling. Then, sauté the veggies until the onions are turning translucent and the veggies are beginning to soften.
Next, add the garlic and continue to sauté for another 2 minutes.
Add the ground lamb or beef and cook the meat until fully browned, stirring occasionally.
Add tomato paste, parsley, rosemary, thyme, salt, pepper, frozen veggies, and flour as soon as the meat has fully cooked. Stir everything to combine thoroughly. Reduce the heat to low and pour in the Worcestershire Sauce, Beef Stock, and Guinness Stout. Stir the mixture constantly until it's fully thickened, and remove the skillet from the heat.
Preheat the oven to 400°f.
Evenly spread mashed potatoes over the top of the Pie and bake the Shepherd's Pie for 25 minutes.
Lastly, Turn the oven to broil for about 2 minutes to get the top extra browned and colorful.
Remove the skillet from the oven, serve, and enjoy!
Expert Tips
- I highly recommend using leftover mashed potatoes for Shepherd's Pie. The potatoes will be a little more dry and dense than they were when freshly made. This will help them hold up as a topping instead of becoming a soupy, sloppy mess.
- If, for any reason, your mashed potatoes are too runny, a quick fix is to add instant potato flakes to the mixture until you've reached the desired texture.
- If you have any Leftover Irish Beef Stew, this is a great way to use that up. Just make a slurry to thicken the soup a bit and follow the remaining instructions for topping and baking.
Recipe FAQs
A Shepherd's Pie calls for ground lamb, and a Cottage Pie calls for Ground beef.
You can make Irish Pub-Style Cottage or Shepherd's Pie with just one recipe. And both are amazing.
Traditional Shepherd's Pie is made of ground lamb, assorted vegetables, a rich brown gravy, and topped with mashed potatoes.
Shepherd's Pie can become sloppy if you're mashed potatoes are too runny to begin with. This can easily be alleviated using leftover mashed potatoes, which automatically become more dense and dry.
Shepherd's Pie pairs perfectly with Irish Fried Cabbage, Oven Roasted Carrots, Irish Soda Bread, and Creamed Spinach.
