Step-by-Step Instructions
Once your ingredients are all measured, heat a 12" Cast Iron Skillet over medium-high heat and begin frying the bacon.
While the bacon is frying, prepare the Cabbage by removing the core and slicing it into thin strips.
Set the sliced cabbage strips aside and dice the onion.
Once the bacon has fully cooked, remove the strips from the skillet and place them on a cooling rack over a paper towel-lined baking sheet. This will help the bacon crisp up even more while the grease drains off.
Reduce the heat to medium and add the diced onion to the skillet; sauté until it becomes translucent.
Next, begin adding and sweating down the Cabbage until the whole head has been placed Into the skillet. Be sure to stir the Cabbage somewhat frequently to ensure an even cook.
While the Cabbage is frying, slice or cut the bacon into bits and add it to the skillet. I like cooking shears to cut the bacon, but a sharp kitchen knife also works.
Lastly, add the remaining ingredients, stir to incorporate, reduce heat to medium-low, and sauté until the Cabbage has fully wilted down but isn't mushy.
