What are Texas Roadhouse Rattlesnake Bites

Texas Roadhouse Rattlesnake Bites are a popular appetizer made from a creamy blend of cheese and diced jalapeños, breaded and deep fried until golden brown. Despite the name, there’s no rattlesnake involved—just a playful way to describe their spicy kick. They’re served hot and crispy, usually with a creamy dipping sauce, and are one of the most requested appetizers on the Texas Roadhouse menu.

    Step-by-Step Instructions

Shredded Monterey and Pepper Jack Cheese being mixed with diced jalapeño.

    Step 1: Make the Filling

In a large mixing bowl, combine the cream cheese, shredded pepper jack, shredded cheddar, and finely diced jalapeños. Mix until smooth and evenly combined.

Shredded cheese and diced jalapeños formed into balls to be chilled.

Step 2: Shape and Chill the Bites

Scoop out small portions of the cheese mixture and roll them into bite-sized balls. Place them on a parchment-lined baking sheet.

Place the shaped bites in the freezer for at least 30 minutes. This helps them hold their shape during breading and frying.

Shredded Cheese Balls being coated in flour, egg wash, and breading.

    Step 3: Bread the Bites

Set up a standard breading station with flour, egg wash, and breadcrumbs. Coat each bite in flour, dip into the egg mixture, then coat thoroughly in breadcrumbs.

    Step 4: Fry

Heat oil to 360°F. Fry the rattlesnake bites in batches for 2–3 minutes, or until golden brown and crispy. Remove and drain on a wire rack or paper towels.

    Epert Tips

Why jalapeños work best: Jalapeños give just enough heat without overpowering the cheese. Removing the seeds keeps the spice level balanced.

Chill before frying: Cold filling holds together better and prevents the cheese from leaking out during frying.

Use a thermometer: Keeping the oil at a steady 350°F ensures a crispy exterior without burning.

Make them ahead: You can bread the bites and refrigerate them up to a day in advance, making party prep easy.

Freeze for later: Unfried, breaded bites freeze well and can be fried straight from frozen.

    Recipe FAQs

    Are Rattlesnake Bites really spicy?

They have a mild to medium heat. You can adjust the spice by adding more or fewer jalapeños.

Can I bake or air fry them?

Yes. Air fry at 375°F for about 8–10 minutes, flipping halfway. Baking works too, but frying gives the best texture.

    What dipping sauce works best?

Ranch is classic, but spicy mayo or a Cajun dipping sauce works great too.

    Can I use pickled jalapeños?

Fresh jalapeños are recommended for the best flavor and texture.
