Step-by-Step Instructions

Step 1: Make the Filling
In a large mixing bowl, combine the cream cheese, shredded pepper jack, shredded cheddar, and finely diced jalapeños. Mix until smooth and evenly combined.

Step 2: Shape and Chill the Bites
Scoop out small portions of the cheese mixture and roll them into bite-sized balls. Place them on a parchment-lined baking sheet.
Place the shaped bites in the freezer for at least 30 minutes. This helps them hold their shape during breading and frying.

Step 3: Bread the Bites
Set up a standard breading station with flour, egg wash, and breadcrumbs. Coat each bite in flour, dip into the egg mixture, then coat thoroughly in breadcrumbs.

Step 4: Fry
Heat oil to 360°F. Fry the rattlesnake bites in batches for 2–3 minutes, or until golden brown and crispy. Remove and drain on a wire rack or paper towels.
Epert Tips
Why jalapeños work best: Jalapeños give just enough heat without overpowering the cheese. Removing the seeds keeps the spice level balanced.
Chill before frying: Cold filling holds together better and prevents the cheese from leaking out during frying.
Use a thermometer: Keeping the oil at a steady 350°F ensures a crispy exterior without burning.
Make them ahead: You can bread the bites and refrigerate them up to a day in advance, making party prep easy.
Freeze for later: Unfried, breaded bites freeze well and can be fried straight from frozen.

Ranch is classic, but spicy mayo or a Cajun dipping sauce works great too.
Fresh jalapeños are recommended for the best flavor and texture.
