These Popeyes Cajun Fries are crispy on the outside, fluffy on the inside, and coated in that bold, salty, spicy seasoning everyone remembers. If you’ve ever wished you could make Popeyes-style fries at home, this copycat recipe delivers the same flavor with simple ingredients and easy steps. Even better, I’m including a homemade version of Popeyes Cajun Sparkle so you get the full experience. Perfect as a side dish or snack, these fries taste just like the real thing—maybe even better.

    What Are Popeyes Cajun Fries?

Popeyes Cajun Fries are seasoned French fries coated in the brand’s signature Cajun Sparkle, a bold blend of salt, spices, and heat. Unlike plain fries, these are all about flavor, with a slightly spicy kick that pairs perfectly with fried chicken and dipping sauces. While Popeyes no longer serves them everywhere, this copycat version recreates that nostalgic fast-food favorite at home. Crispy, seasoned, and addictive, they’re a cult classic for a reason.

    Cajun Fries

    • Russet Potatoes
    • All-Purpose Flour
    • Cornstarch
    • Cajun Seasoning (I use Copycat Cajun Sparkle)
    • Seltzer Water
    • Vegetable Oil

See the recipe card below for full information on ingredients and quantities.

    Step-by-Step Instructions

A potato being sliced into french fries on a wooden cutting board.

    Step 1. Slice the Potatoes

Begin by peeling the potatoes, then slice them into fries.

As you slice them, place the fries in a bowl of cold water to retain the color.

Step 2. Ice Bath the Fries

Once you have sliced all of the fries, and they are submerged in the water, top the bowl off with some ice cubes.

Let the fries rest in the ice bath for at least 15 minutes.

Preheat the oil to 375°F in a deep fryer.

Step 3. Make the Cajun Fry Coating

While the fries are in the ice bath and the oil heats up, whisk together the flour, cornstarch, and Cajun seasoning, and then stir in the club soda.

Now, drain the fries, dump them in the batter, and mix them around until evenly coated.

Step 4. Deep-Fry and Season the Fries

Working in batches, fry the fries for 8-10 minutes, or until golden brown and crispy.

Toss them around about halfway through to break them up a little bit and be sure they are getting crispy on all sides.

Remove them to a paper-towel-lined cookie sheet and season them with extra Cajun seasoning while they’re still hot.

    Popeyes Cajun Sparkle (Copycat Seasoning)

Popeyes Cajun Sparkle is the iconic seasoning that gives these fries their signature flavor. It’s salty, slightly spicy, and incredibly addictive. While it used to be available in packets, it’s easy to recreate at home with a handful of pantry spices. This homemade Cajun Sparkle delivers that same bold flavor and clings perfectly to freshly cooked fries.

    Cajun Sparkle Ingredients

    • Salt
    • Black Pepper
    • Garlic Powder
    • Onion Powder
    • Ground Sage
    • Ground Celery Seed
    • Sugar
    • Paprika
    • Accent
    • Cayenne Pepper

    How to use Cajun Sparkle

Toss the fries with Cajun Sparkle while they’re still hot so the seasoning sticks evenly. You can also use this seasoning on chicken, popcorn, roasted potatoes, or even sprinkled over buttered corn.

    Expert Tips

Use russet potatoes for the best texture. Russet potatoes create fries that are crispy on the outside and fluffy on the inside. They hold up well to frying and absorb seasoning perfectly.

Season while the fries are hot. Cajun Sparkle sticks best when the fries are freshly cooked. Toss them immediately after frying or baking for maximum flavor.

Adjust the heat to your taste. If you prefer a milder fry, reduce the cayenne or spicy elements in the Cajun Sparkle. For extra heat, add a little more.

Double-fry for extra crispiness. For restaurant-style fries, fry once at a lower temperature, let them rest, then fry again at a higher temperature until golden and crispy.

Cajun Sparkle isn’t just for fries. This seasoning works on chicken tenders, wings, popcorn, and roasted vegetables. Make extra and keep it on hand.

    Recipe FAQs

    Are Popeyes Cajun Fries spicy?

They have a mild to medium heat. The spice level is noticeable but not overwhelming, and it’s easy to adjust when making them at home.

Can I bake or air fry these fries?

Yes. While frying gives the most authentic texture, baking or air frying works well and still delivers great flavor.

What is Cajun Sparkle made of?

Cajun Sparkle is a blend of salt, paprika, garlic powder, onion powder, and spices that create Popeyes’ signature flavor.

What should I serve with Cajun fries?

They pair perfectly with fried chicken, chicken sandwiches, dipping sauces, or as a snack on their own.
