Popeyes Cajun Fries
- 6 Russet Potatoes small
- 2 Cups All-Purpose Flour
- 1 ½ tablespoon Cornstarch
- 2 tablespoon Cajun Seasoning I use Cajun Sparkle
- 2 Cups Seltzer Water Cold
- Vegetable Oil For Frying
Popeyes Cajun Sparkle
- 2 tablespoon Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Ground Sage
- 1 teaspoon Ground Celery Seed
- 1 teaspoon Sugar
- ½ teaspoon Paprika
- ½ teaspoon Accent
- ¼ teaspoon Cayenne Pepper
Peel the potatoes, then slice them into fries.
As you slice them, place the fries in a bowl of cold water.
Once you have sliced all of the fries, and they are submerged in the water, top the bowl off with some ice cubes.
Let the fries rest in the ice bath for at least 15 minutes.
Preheat the oil to 375°F in a deep fryer.
Whisk together the flour, cornstarch, and Cajun seasoning, and then stir in the club soda.
Drain the fries, dump them in the batter, and mix them around until evenly coated.
Working in batches, fry the fries for 8-10 minutes, or until golden brown and crispy.
Toss them around about halfway through to break them up a little bit and be sure they are getting crispy on all sides.
Remove them to a paper-towel-lined cookie sheet and season them with extra Cajun seasoning while they’re still hot.
