    Leftover Pulled Pork Fried Rice

    This Leftover Pork Fried Rice Recipe uses leftover smoked pulled pork. That, combined with a traditional fried rice recipe you've got an Asian-Fusion dish that the whole family will enjoy. Plus, since you're using leftover pork, you can get this entire dish prepared and served in about 30 minutes, making it a great weeknight meal.

    Why You'll Love This Recipe

    Using leftover smoked pulled pork in this fried rice recipe gives you a perfect combination of flavors you won't commonly find. It's like a Texas BBQ Asian Fusion dish you never knew you needed. Above and beyond the amazing flavors, it's a quick meal to throw together with ingredients you most likely already have.

    Ingredients

    Meat: While this is a recipe for Pulled Pork Fried rice, feel free to use chicken, shrimp, brisket, or pork chips; whatever you have will be great!

    Eggs: A great fried recipe wouldn't be so great without eggs!

    Rice: Be sure to have plenty of day-old rice on hand. (See Expert Tips)

    Vegetables: Frozen mixed vegetables work perfectly in this recipe. I like using a bag of peas, corn, carrots, and green beans.

    Liquids: The liquids incorporate Asian flavors. You'll need Liquid Aminos or Soy Sauce, Rice Vinegar, Sesame Oil, Fish Sauce, Stir Fry Oil, and Hoisin Sauce. (See Expert Tips)

    Herbs and Spices: Salt and Pepper to taste.

    Step-by-Step Instructions

    Step 1: On medium-low heat, Sauté the onion in half the sesame oil.

    Mixed vegetables are poured into a wok.

    Step 2: Add a bag of frozen mixed veggies to the onions and cook for 4-5 minutes. Stir occasionally.

    Step 3: Add the Rice, Sauces, and Leftover Pork or Protein you choose. Stir constantly after adding each. Everything needs to be well mixed.

    Step 4: Make room for the eggs by moving your fried rice over to one side. Add the eggs and begin to scramble them. Once they have begun to cook through, mix them with the rest of the fried rice mixture.

    Expert Tips

    • Using day-old rice is imperative. I use a rice cooker a day or two before and then refrigerate the rice. This takes away the stickiness of the so you have individual cooked grains.
    • Liquid Aminos are an excellent substitution for soy sauce. It's far less salty but has all the same wonderful flavor that you expect from a great soy sauce.

    Leftover Pulled Pork Fried Rice

    This is an excellent way to use leftovers from a Smoked Pork Butt. However, you can replace the protein with anything you have on hand, and it's a great way to feed the whole family for a couple of days.

    Ingredients

    • 1 Lb Left Over Pulled Pork
    • 5 Cups Cooked Day Old Rice
    • 12 Oz Frozen Peas and Carrots
    • 1 Yellow Onion - Chopped
    • 6 Eggs
    • ½ Cup Aminos
    • 1 tablespoon Rice Vinegar
    • 5 tablespoon Sesame Oil - Divided
    • 3 tablespoon Fish Sauce
    • 3 tablespoon Hoisin Sauce

    Instructions

    • in a Large Wok, Sauté Onions in 2-½ tablespoon of sesame oil.
    • Add frozen veggies to the onions and cook, stirring for about 4-5 minutes.
    • Add the rice and stir to combine.
    • Add the Protein and stir to combine.
    • Stir in all sauces including the remaining Rice Vinegar.
    • Make room for eggs by moving fried rice to one side of the Wok. Add the eggs and as they cook begin to add them to the mixture.
    • Serve by itself or with your favorite sides.
