My Fried Rice Back Story.
This is another recipe from my wife just like the Slow Cooker Pinto Bean Soup. I'm not going to say that between the two of us I do most of the cooking because I do. LOL...but Fried rice is one of the best things that she makes. While it normally contains chicken and is brilliant it never hurts to use really any leftover proteins you might have. I also really like the fact that this completely switches things up. Smoked Pork Butt is so versatile that within three days, all cravings can be met with BBQ, Tacos, and Fried rice.
Speaking of cravings...
About once or twice a year, without fail, my wife and I both have a craving for the Chinese Buffet. Which may be very relatable. However, about 4 years ago we realized that every time this happens, it's a rainy overcast day. I have no idea why it happens that way but it's not different really than any of my other cravings.
When I am craving something specific I want to know how its made. So I figure it out and always attempt to make it better than the restaurant I would've gone too. I do this for two reasons. You can save so much money by cooking at home. For our family of 4 to eat at the Chinese buffet was no less than $50. Do you know how much this Leftover Pork Fried Rice Recipe will make for $50? Me either but it would feed your entire extended family! Lastly, I know exactly what goes into my food, where it was cooked, and how it was prepared. Cleanliness is so important when cooking. The only real way to know is if you do it yourself.
Now, I know that I am comparing this fried rice to that of a Chinese Buffett, not exactly the top of the culinary chain. But this recipe is WAY better and will certainly hit your Chinese food craving!
Left Over Pork Fried Rice
Let's Get It Started!

I always like to prep my ingredients and supplies first. In this recipe I recommend using a Wok. They cook so evenly through the bottom and rounded sides plus offer a ton of room this many ingredients. In regard to ingredients, I use smoked pulled pork (or any protein of your choice), frozen mixed veggies, cooked day old rice, eggs, onion, rice vinegar, liquid aminos, hoisin sauce, fish sauce, and sesame oil.
Using day old rice is imperative. I use a rice cooker a day or two before and the refrigerate the rice. This takes away the stickiness of the so you have individual cooked grains.
1. Onions
On medium low heat, Sauté the onion in half the sesame oil.

2. Add Frozen Veggies

Add a bag of frozen mixed veggies to the onions and cook for about 4-5 minutes. Stir occasionally.
3. Rice, Sauces, Protein
Add the Rice, Sauces, and Leftover Pork or Protein of your choice. Stir constantly after adding each. Everything needs to be well mixed.

4. Eggs

Make room for the eggs by moving your fried rice over to one side. Add the eggs and begin to scramble them. Once they have began to cook through start mixing them in with the rest of the fried rice mixture.
5. Serve and Enjoy!
This Leftover pork Fried Rice is perfect all by itself but if you're looking for something to eat with it, I highly recommend the Van's Kitchen Egg rolls which can be found at most grocery stores.

Leftover Pork Fried Rice Recipe
Ingredients
- 1 Lb Left Over
- 5 Cups Cooked Day Old Rice
- 1 - 12oz Bag Frozen Peas and Carrots
- 1 Medium Onion Chopped
- 6 Eggs
- ½ Cup Aminos
- 1 tablespoon Rice Vinegar
- 5 tablespoon Sesame Oil - Divided
- 3 tablespoon Fish Sauce
- 3 tablespoon Hoisin Sauce
Instructions
- in a Large Wok, Sauté Onions in 2-½ tablespoon of sesame oil.
- Add frozen veggies to the onions and cook, stirring for about 4-5 minutes.
- Add the rice and stir to combine.
- Add the Protein and stir to combine.
- Stir in all sauces including the remaining Rice Vinegar.
- Make room for eggs by moving fried rice to one side of the Wok. Add the eggs and as they cook begin to add them to the mixture.
- Serve by itself or with your favorite sides.
