    Tomato Basil Soup Recipe

    A great Tomato Basil Soup Recipe is essential. If you need a quick weeknight meal, this is It! A soup that the whole family will love and guests will be very impressed. See, most of the tomato soup eating world tend to go for the canned stuff. Sure they may spruce it up with some dried basil, cream, and parmesan. However, they're still missing out on the depth of flavor and texture that only freshly made soup can provide.

    I was one of those people for quite a long time. Until one day I ordered tomato basil soup at a restaurant in Omaha, Nebraska called Garden Cafe. It was the most flavorful tomato soup I had ever had. I think I told everyone about it for at least a month straight. I even went back to the establishment to buy it in bulk, take it home and have for another week.

    Thats some damn good soup right there!

    This is the feeling that this recipe will leave with you, your family, and friends. So, with all of that being said, let's jump right in!

    How to make Tomato Basil Soup

    For this tomato basil soup recipe I'm using my Instant Pot Ace Nova Blender. Which is an incredibly powerful tool in the kitchen. So much so, that is the only equipment you'll need for this recipe.

    Just as simple as the equipment are the ingredients.

    Tomato Basil Soup Ingredients

    Vegetables

    The vegetables that you'll need are 1 small yellow onion, 1 stalk of celery, 1 large carrot, 3 sun-dried tomatoes, and one 28 oz can of San Marzano tomatoes.

    Herbs and Spices

    Grab 1 Tablespoon of Sugar, 1 Tablespoon of minced garlic, 2 Tablespoons of dried basil, chopped fresh basil for garnish, ¼ teaspoon of kosher salt, and ¼ teaspoon of black pepper.

    Liquids

    Soup just isn't very soupy with out some extra liquid in it. You'll want 2 cups of chicken stock and 1 cup of heavy cream.

    Extras

    Lastly, use some freshly grated parmesan cheese in the soup. I personally like to add it into the soup at the end and give it a few good pulses to combine. I'll tell you though, this does add a texture to it. So if you prefer to leave it out and then add it to the individual servings thats fine as well. By doing so the soup will be a creamier texture.

    Cooking Instructions

    Roughly chop the veggies so they aren't so large put them in the blender and press the soup button twice. Press start and let it do its thing. Once its complete pour in the cream and parmesan then press the pulse option then start. All done! Serve hot with a grilled cheese, cheese frenchee, oyster crackers, or whatever else you'd like.

    In Conclusion

    A Tomato basil soup recipe can be just as easy as opening a can, adding water or whatever, and heating it up. Only with the right equipment and ingredients it will be a hundred times more flavorful than the previous option.

    Ingredients
      

    • 1 Yellow Onion, diced
    • 1 Celery Stalk, sliced
    • 1 Large Carrot, sliced
    • 28 Oz San Marzano Tomatoes, canned
    • 1 Tbsp. Minced Garlic
    • 2 Tbsp. Dried Basil
    • 1 Tbsp. Sugar
    • 3 Sun-dried tomatoes
    • ¼ tsp. Kosher Salt
    • ¼ tsp. Black Pepper
    • 1 Tbsp. Tomato Paste
    • 2 Cups Chicken Stock
    • 1 Cup Heavy Cream
    • 8 Oz Parmesan Cheese, freshly grated

    Instructions
     

    • In a Cooking Blender add the veggies, herbs, spices, San Marzano Tomatoes, and Chicken Broth.
    • Press the Soup button twice or corresponding setting if you aren't using the Ace Nova Blender. Then press start.
    • Once the blender is complete add the cream and freshly grated parmesan(optional) and press the pulse button once, then start.
    • Serve hot with fresh basil, parmesan cheese, oyster crackers, grilled cheese sandwiches, cheese frenchees, or whatever you like.
