    Hatch Green Chile Corn Chowder with Blackened Shrimp

    Why You'll Love This Recipe

    This easy Hatch Green Chile Corn Chowder with Blackened Shrimp is perfect for any season or occasion. Pairing the flavor profile of the blackened shrimp with the amazingly fresh and flavorful green chiles from the Hatch Chile Store is a culinary experience like no other.

    Ingredients

    Meat: All you'll need is shrimp.

    Vegetables: Yellow or White Onions, Russet Potatoes, Frozen Corn, and Hot Hatch Chile Roast.

    Liquids: Olive Oil, Chicken Stock/Broth, Salted Butter, and Heavy Cream.

    Herbs and Spices: Minced Garlic, Bay Leaf, Smoked Paprika, and Blackening Seasoning.

    Step-by-Step Instructions

    Step 1: Prepare all of your ingredients ahead of time.

    Step 2: Heat the Olive Oil in a Dutch Oven over medium-low heat and sauté the onions until translucent and just beginning to brown.

    Step 3: Add the chicken broth and cubed potatoes. Bring this to a boil until the potatoes are softened.

    Step 4: Once the potatoes are soft, add the Heavy Cream, Corn, and Paprika.

    Step 5: Stir in the Hatch Green Chiles and toss in a couple of bay leaves. Bring this to a boil, cover, reduce heat, and simmer for 45 minutes.

    Step 6: For the blackened shrimp, melt some butter in a glass dish, add your favorite blackened seasoning, and then shrimp. Stir this mixture and cook in a Cast Iron Skillet on high heat for about 4-5 minutes or until the shrimp is a bit crispy on the outside.

    • This Hatch Green Chile Corn chowder Recipe is perfect with blackened shrimp. Plus, it isn't too thick, making it a lighter chowder. It can be whatever spice level you like and is full of flavor. I used Hot Pure Green Chile Roast, but if you prefer a milder spice, there are certainly levels to meet anyone's comfort.
    • Spoon the Hatch Green Chile Corn Chowder into the bowls, place a generous amount of shrimp in the center of the bowl, and garnish with two Lime wedges.

    Ingredients

    The Chowder

    • 2 tablespoon Olive Oil
    • 2 tablespoon Minced Garlic
    • 1 Onion Diced
    • 5 cups Chicken Broth
    • 6 Russet Potatoes
    • 1 Bay Leaf
    • 12 oz package Frozen Corn
    • ½ teaspoon Smoked Paprika
    • 1 Cup Hot Hatch Green Chile Roast
    • ½ Cup Heavy Cream
    • ½ Lime for serving (Optional - See Note)

    The Blackened Shrimp

    • 1 Lb Medium Shrimp Peeled/Deveined Tail Off
    • 4 tablespoon Unsalted Butter
    • 2 tablespoon Blackened Seasoning

    Instructions

    The Chowder

    • Heat Olive Oil In a 6qt Dutch Oven and sauté onion until just starting to slightly brown.
    • Add Garlic and continue to sauté until fragrant.
    • Pour in Chicken Broth, potatoes, add the bay leaf, cover and bring to a slow boil until potatoes begin to soften.
    • Stir in Paprika, Heavy Cream, Hatch Pure Green Chile Roast, and Corn returning to boil and simmer for 45 minutes.

    The Shrimp

    • In a microwave safe bowl melt butter for about 35 Seconds then stir to completely melt.
    • Add blackened seasoning to the butter stirring to create a mixture.
    • In a separate bowl pour the butter mixture over the shrimp and stir to completely cover.
    • Heat a Cast Iron Skillet over medium high heat and add shrimp sautéing until cooked through and blackened on all sides.

    Serving

    • Spoon the Chowder into bowls, top with a generous amount of shrimp, and garnish with two Lime wedges.

      This dish is easy and so delicious ! Leftovers were even tastier. Light enough for a summer meal, but also warming enough for cold weather.
