Easy Shepherd's Pie Recipe: Irish Pub Style

Ingredients

  • 2 tablespoon Olive Oil
  • 2 tablespoon Salted Butter
  • 1 Medium Yellow Onion - diced
  • 2 Large Carrots - sliced
  • 2 Celery Stalks - sliced
  • 1 lb Ground Lamb or Beef
  • 2 teaspoon Minced Garlic
  • 2 teaspoon Dried Parsley
  • 1 teaspoon Dried Rosemary
  • 1 tsp. Dried Thyme
  • ½ teaspoon Kosher Salt
  • ½ teaspoon Black Pepper
  • 1 Cup Frozen Corn
  • 1 Cup Frozen Peas
  • Cup All Purpose Flour
  • 2 tablespoon Tomato Paste
  • 1 tablespoon Worcestershire Sauce
  • 1 Cup Beef Stock
  • 1 Cup Guinness Stout
  • Mashed Potatoes - prepared

Instructions

  • Begin by heating the butter and olive oil In a over medium-low heat.
  • Once the oil is hot and butter is bubbling, add the onions, carrots, and celery, and sauté the veggies until the onions are turning translucent and veggies are beginning to soften.
  • Next, add the garlic and continue to sauté for another 2 minutes.
  • Add the ground lamb or beef and cook the meat until fully browned, stirring occasionally.
  • As soon as the meat has fully cooked, add the tomato paste, parsley, rosemary, thyme, salt, pepper, frozen veggies and flour. Stir everything to combine thoroughly. Reduce the heat to low and pour in the Worcestershire Sauce, Beef Stock, and Guinness Stout. Stir the mixture constantly until it's fully thickened, and remove the skillet from the heat.
  • Preheat the oven to 400°f.
  • Turn the oven to broil for about 2 minutes to get the top extra browned and colorful.
  • Remove the from the oven, serve, and enjoy!

Notes

  • I highly recommend using leftover mashed potatoes for Shepherd's Pie. The potatoes will be a little more dry and dense than they were when freshly made. This will help them hold up as a topping instead of becoming a soupy, sloppy mess.
  • If, for any reason, your mashed potatoes are too runny, a quick fix is to add instant potato flakes to the mixture until you've reached the desired texture.
  • If you have any Leftover Irish Beef Stew, this is a great way to use that up. Just make a slurry to thicken the soup a bit and follow the remaining instructions for topping and baking.
