Southern Hush Puppies
These homemade Southern Hush Puppies are crispy and golden outside while staying extra moist and tender inside. Made with buttermilk, onion, and Cajun seasoning, they’re perfect with fried fish, seafood, or Cajun remoulade.

- 1 ½ Cups Self Rising Cornmeal Mix
- ½ Cup All Purpose Flour
- 2 teaspoon Kosher Salt
- 2 teaspoon Cajun Seasoning
- 1 ½ teaspoon Baking Powder
- ½ teaspoon Baking Soda
- 1 tablespoon Sugar
- 1 Medium Onion finely minced
- 1 Cup Buttermilk
- 1 Egg
- Vegetable Oil for frying
Thoroughly whisk together all of the dry ingredients.
Finely mince the onion.
Add the buttermilk, egg, and minced onion to the dry mixture.
Stir everything together just until the hush puppy batter is fully combined and you don’t see any dry flour or cornmeal remaining.
Set the batter aside and let it rest while you heat your frying oil to 360 degrees Fahrenheit.
Carefully drop about five or six hush puppies into the fryer at a time.
Cook the hush puppies for about three minutes, flipping them over halfway through so they become evenly golden brown on all sides.
As soon as they’re finished frying, transfer the hush puppies to a wire rack set over a baking sheet.
- Keep your oil around 360°F. If it drops too much, the hush puppies can absorb excess oil instead of developing a crisp exterior.
- Finely dice the onion so it distributes evenly and cooks through during the short frying time.
- Don't overcrowd the fryer. Too many at once will drop the oil temperature.
- Don't skip the buttermilk; it's essential to the moist interior.
- Adjust the size if you'd like. A heaping tablespoon makes about 10 substantial hush puppies. Smaller scoops give you more hush puppies and a higher crust-to-center ratio, but they'll cook faster, so keep an eye on them.
- Serve them fresh. Like most fried foods, hush puppies are best shortly after they come out of the fryer.
