Crab Salad Recipe: A Light and Refreshing Summer Dish

- 1 lb Imitation Crab - diced
- 1 Shallot - diced
- 3-4 Green Onions - sliced
- Juice of Half a Lemon
- ½ teaspoon Kosher Salt
- ½ teaspoon Black Pepper
- ½ tsp. Smoked Paprika
- ½ Tbsp. Fresh Dill - diced
- ½ Cup Mayonnaise
- 1 teaspoon Stone Ground Mustard
- ¼ Cup Sour Cream
Start by dicing up the imitation crab. I find that it's easiest in a hand-powered food processor. Simply add the pieces and give it a few good spins until your desired texture.
Next, dice up the shallots and green onions. You can obviously do this using the exact same hand-powered food processor or with a sharp kitchen knife, whichever you prefer.
Add the imitation crab along with the shallots and green onions to a large mixing bowl.
In a separate bowl whisk together the mayonnaise, stone ground mustard, sour cream, fresh dill, smoked paprika, kosher salt, and black pepper.
Lastly, pour the crab salad dressing over the imitation crab and veggie mixture and gently stir to combine all of the ingredients.
Refrigerate for at least 2 hours before serving. This will not only allow everything to get cold again but will give the flavors time to meld.
