Coq au Vin: An Easy Instant Pot Recipe

Coq au Vin doesn't need to be intimidating. This Instant Pot Recipe is easy and quick enough for a cozy, elegant weeknight meal.

Ingredients

  • 4 Tbsp. Unsalted Butter
  • 6 Strips Thick Cut Bacon - diced
  • 3 Shallots - peeled and separated
  • 1 Tbsp. Minced Garlic
  • 2 Tbsp. Red Wine Vinegar
  • ½ Cup Chicken Stock
  • Kosher Salt
  • Black Pepper
  • 2 Tbsp. Tomato Paste
  • 8 Oz Sliced Mushrooms
  • 3 Large Carrots - sliced
  • 2 Cups Pinot Noir
  • 4 Chicken Leg Quarters
  • 1 Bunch Fresh Thyme
  • 2 Tbsp. Cornstarch
  • 4 Tbsp. Water

Instructions

  • Set your Instant Pot to sauté on high for 15 minutes and add the butter.
  • Add the diced bacon and allow it to start to brown and curl.
  • Sauté the peeled and separated shallots with the butter and bacon until they soften and turn translucent.
  • Add the garlic and continue Sautéing for another 2-3 minutes or until the garlic becomes aromatic.
  • Pour in the Red Wine Vinegar and Chicken stock and deglaze the pot.
  • Add the remaining ingredients and set the Instant Pot to Pressure Cook on High for 10 minutes.
  • Allow for a 15-minute release.
  • Remove the chicken and set it aside. Make a slurry using the water and cornstarch, and pour the slurry into the Coq au Vin, stirring to fully combine.
  • Place the chicken back into the Instant pot and set it to Sauté to bring to a simmer allowing the sauce to thicken. This will take about 5-10 minutes or until your desired thickness has been reached.
  • Serve your Coq au Vin with some amazing matched potatoes and maybe even some crusty french bread to clean up the whole plate when you're done.

  • If you would like to stick to a full French theme for a dinner party, consider making this Escargot without the shells as an appetizer. This delicacy from the Burgundy region of France is also incredible.
  • I typically use a bottle I will drink for the wine, like Meiomi. I recommend going a little cheaper if you don't want to drink whatever's left.
