Slow Cooker Corned Beef Hash is easily one of my favorite breakfast and brunch items. Now, while I don't mind it from the can, nothing beats a homemade hash, and this one certainly doesn't disappoint. The slow-cooked Corned Beef Brisket and Crispy Air Fryer Rosemary Breakfast Potatoes work perfectly together. Plus, most of the cooking can be done in your sleep, Literally.

Why You'll Love This Recipe
There's nothing like an excellent brunch; this recipe doesn't disappoint. The corned beef brisket can be cooked overnight and ready in the morning. Then all that's left is air frying the potatoes and frying your eggs. This will be one of the best comfort food breakfasts you'll ever have. Ingredients
Meat: Corned beef brisket makes an incredible hash and is easy to cook.
Liquids: All you'll need is Guinness Extra Draught Stout for this corned beef recipe.
Vegetables: Sweet onions are the only vegetable you'll need for the corned beef. (See Expert Tips)
Herbs and Spices: For the herbs and spices, have some minced garlic and bay leaves on hand. Other than that, the peppercorn seasoning packet included with your corned beef brisket will go a long way.

Step-by-Step Instructions

Step 1: Open that Corned Beef Brisket, rinse it under cold water, and pat it dry. This rinses any extra salt and whatnot that was in the package. Be sure to keep the little peppercorn packet; you're going to need it.
Next, place the brisket, fat side, in your slow cooker. This allows some of that fat to render through the meat while cooking but also makes for easy removal of the fat at the end. I do the same thing for Texas-Style Smoked Brisket and Smoked Pulled Pork.

Step 2: Quarter two onions and place them around the brisket.

Step 3: Dump the peppercorn packet, garlic, and bay leaves evenly across the top of the brisket.

Step 4: Pour the Guinness Extra Stout Draught over the Corned Beef and onions.
Cover and cook on low for 8 hours.

Step 5: Once the corned beef is done in the slow cooker, I like to take it out, discard any extra fat, and chop the onions and corned beef on a cutting board.

Step 6: Toss the chopped corned beef and onions into a hot cast Iron skillet. This will crisp it up before adding in the potatoes.
Now, there are two serving options. Either plate Air fryer rosemary potatoes with the meat and onions or add the potatoes to the skillet after they come out of the air fryer. Either way is delicious topped with some runny eggs.
Expert Tips
- This recipe works fantastic if you also have leftover Corned beef and cabbage. Even better, if you want to, you can add some chopped cabbage to the slow cooker in the last two hours and have both available.

Per Irish Central, beef wasn't readily available in Ireland. However, corned beef was the cheapest when they came to America, so that's what was eaten on St. Patrick's Day.

Corned Beef Hash Recipe
Ingredients
Corned Beef
- 3-4 lb Corned Beef Brisket
- 2 Sweet Onions - Quartered
- 12 Oz Bottle Guinness Extra Draught Stout
- 2 Bay Leaves
- 4 Tbsps Minced Garlic
Instructions
The Corned Beef
- Place Corned Beef Brisket in a Slow Cooker with fat side up.
- Add quartered onions around the brisket and pour beer over the top ensuring it at least comes halfway up the brisket. If not add more beer and drink the rest!
- Pour the provided peppercorn packet and Minced Garlic over the brisket and place the Bay leaves on top.
- Cover and cook on low for 8 hours.
The Corned Beef Hash
- While the Potatoes are cooking prepare the brisket for the hash.
- Discard any remaining solid fat from the slow cooker.
- Transport the Corned Beef and Onions to a large cutting board or tray. Dice the onions and cube the corned beef.
- Heat a Cast Iron skillet over medium high heat with about a tablespoon of olive oil and toss in the corned beef with onions cooking until just getting crispy.
- Plate the , top with corned beef, onions, and fried eggs.
- Serve with buttered Rosemary toast.
