    Why You'll Love This Recipe

If you've ever made Irish Beef Stew, more than likely, you also ended up with some leftovers. This is the perfect way to use those up. It's as simple as adding a thickener to stew, topping it with a pie crust, and popping it in the.

Don't forget a fresh loaf of Homemade Irish Soda Bread for dipping!

    Ingredients

    • Leftover Irish Beef Stew
    • Instant Potato Flakes
    • Pre-Made Pie Crust
    • Egg wash

See the recipe card below for full information on ingredients and quantities.

    Step-by-Step Instructions

Begin by heating a 12" Inch Cast Iron Skillet over low heat and add the leftover Irish Beef Stew.

Allow the stew to liquefy, and add potato flakes to thicken the stew.

Be sure to leave about an Inch or two from the top of the skillet. You don't want It bubbling over In the oven.

Once you've reached the desired thickness, remove the skillet from the heat and preheat the oven to 425°f.

While the oven Is preheating, slice the Pie Crust into strips using a pizza cutter. I slice them into about an inch thick strips. Now,

Braid the strips on top of the beef pot pie mix and brush the crust with an egg wash.

Lastly, bake the pie for 45 minutes or until the top is golden brown and crispy.

    Expert Tips

    • Using instant potato flakes definitely thickens the stew and adds another layer of heartiness. However, if you don't want the added carbs, making a slurry is also a good option for thickening.
    • This Irish Beef Stew also makes an excellent filling for an Easy Shepherd's Pie. Try also using these homemade garlicky mashed potatoes as a topping.
    • Braiding the pie crust is completely optional but adds to this dish's overall presentation.

How long does leftover beef stew last in the fridge?

Leftover beef stew will last in the fridge for up to four days. Using the stew as a filling for pot pie or shepherd's pie is a great way to switch things up.
